For me a light lunch is a bowl of fruit. I had avocado on toast for breakfast today, so I won't be having lunch. Just a light supper tonight.

Mo, the spring roll is perfect for a vegan. There is no excuse for not trying it.

Spring rolls and Egg rolls are great, but I can't believe all of this frog leg talk. Kremit, er.. I mean, Kermit would be pretty upset.

echt, it's not that I don't like spring rolls. I love them dipped in sweet and sour sauce, but I'm really trying hard to avoid fried foods, so I'm ignoring them while they scream at me off the page.

Re: Recipes

I love finger food, especially wraps. I ate my first stuffed grape leave when I was 15 and became hooked. I disagree with olive oil being a superfood so I cut way back on the amount of oil used in my stuffed grape leave recipe. Plus I'm frugal and grape leaves are free to anyone in almost every corner of the world. I also use collard greens for a wrap if you are willing to forget everything you were taught about collards by cooking them to death. I use a vegetable peeler or paring knife to remove most of the thick stem then stack them in a steamer for about 15 minutes. You end up with huge grape leaves.

Mo, fresh spring rolls are not fried. They are a salad wrapped in rice paper. Click on the link I provided and watch the slideshow and video. There is no cooking except maybe the dipping sauce. Asians cook hoisin to get rid of the raw taste, so you can warm it up in the microwave before stirring in the peanut butter. It's a sauce not a paste, but any low fat salad dressing will do.

Re:

I can't do the watching with my slow internet connection unfortunately echt.

I really don't enjoy eastern cooking except for curries and foods fried in egg, I also don't like cooked nuts very much. I'm afraid my taste in food is very boring.

I prefer Mediterranean above everything else. I'd eat tomato, olive oil, garlic and onion based foods every day if it wasn't so fattening. Also I have to watch my digestion so I do eat a lot of raw fruits and vegetables, those that don't spark my allergies.

My favourite food is fresh bread, cheese and wine. If I wasn't eating a pasta with tomato sauce (I make my own), I would eat a cheese platter with a glass of wine.

I'm really trying to go completely vegan, so I've drastically reduced my cheese intake and I'm baking my own health bread, made with a mix I bought at the local vegetable market.

As i said, very boring. I used to eat more exotic foods when I was younger, and I've always been prepared to try new foods but with experience, I know what I like to taste, and I know what my body can work with, also I've done some extreme weight reduction in the last months, so I don't spend as much time around food these days.

Re: Recipes

Mediterranean for Mo.

It's hard to cook Mediterranean without eggs and anchovies, plus Mediterranean cooking is way too salty and oily for me. What I cook is called Mediterraneanish. I've been making Greek style flat bread pizza on the outdoor grill long before anyone heard of Wolfgang Puck. My dough is made with a blend of 100% wheat flour and all purpose flour, along with rapid rise yeast. You can adjust the flour to taste but it should include some whole wheat flour. I also think it's important to refrigerate the dough for a few hours to develop the yeast flavor.

Tomatoes are not from the Mediterranean so use pesto, olives, or chickpeas for your sauce, along with a feta or ricotta cheese. The ingredients should be simple and few, and the pizza should be cooked outside on a very hot grill. Wolfgang Puck became famous for his small, individual, lunch pizza that would be at your table in less than 10 minutes, or what is known as the California pizza. Some of the best Mediterraneanish restaurants are in California. A lot better than the tomato paste sandwich they call pizza in New York.

You must remember most people in this group have not had a New York pizza. They may have had pizza made in the style of New York Pizza, but not the real thing. I like New York Pizza, but I also like my own pizza and even the local gas station makes decent pizza anymore. But a true NY Pizza is best. And then it depends on which family makes the pizza, as you know a pizza in mid-town will taste different if it's made in one of the boroughs. It just comes down to personal choice.
